02 / Method

Method

  1. 01

Line a small loaf tin or 16 cm round tin with parchment.

  2. 02

Finely crush the cookies in a food processor or with a rolling pin.

  3. 03

Mix 10 crushed cookies through the yogurt. The mixture thickens as the crumbs absorb moisture.

  4. 04

Spoon into the tin, smooth the top and scatter over the remaining crumbs.

  5. 05

Chill for at least 4 hours, preferably overnight. Slice cold with a clean, sharp knife.

  • Use coconut cookies for a different flavour, checking the allergen label first.
